Thuyamalli (also spelled Thooyamalli) is a traditional, non-hybrid rice variety native to Tamil Nadu, cultivated for centuries in the fertile paddies of the Cauvery delta. Its name comes from two Tamil words — thooya (pure) and malli (jasmine) — a nod to the way its ear-heads resemble a jasmine bud just before flowering.
